Crowds—ubiquitous as early as 7 in the morning—form snaking queues at 216 Bedok North Food Centre. Sandwiched between these popular stalls is one with a quaint signboard that reads Plum & Rice.

Even with a tenancy of slightly more than a year, onlookers are still skeptical and curious. Beyond the noren, three graduates of the Culinary Institute of America are hard at work. But what do these young chefs have to offer?
