Jay, founder of Fossa Chocolate, travels and seeks inspiration from various individuals (such as farmers who share backstories with him) to create flavors such as the nutty and silky Bolivia, Alto Beni 85%, and the umami and creamy Sake Kasu. He further elevates the character of these creations by fine-tuning the roasting profile for each batch of cacao beans, accounting for intrinsic factors of the produce—such as harvest conditions and flavor of the beans.
